OK - I went to read it. Now, what I would pay to see is Henri on TV demonstrating this because he explains very well.
One thing I don't understand - what is a "fermenting lock"?
25-30C is no problem here - I can put it outdoors.
Is it best to use metal or porcelain to make this in? what about plastic, is that OK?

Tallahassee has nothing there - it's a very boring place. Make the trip be to Key West and I'll enter the competition. :)

That´s how it looks. It makes bubbling sound when fermenting is on progress, so it releases some extra gas/pressure.
I guess... Henri knows better.
